Pumpkin season in New England is pretty epic. You can find a pumpkin version of almost anything—from cereal to coffee to muffins. Unfortunately, many of these items aren’t made with pumpkin at all. Artificial flavors and colors have replaced real pumpkin to save money and time. This recipe pays homage to my mom, who always uses freshly roasted sugar pumpkin in her holiday pies and inspired me to do the same. You can substitute with kabocha or butternut squash, just make sure your winter squash of choice is fresh. Trust me—you will never think of pumpkin the same way again!
